Which boils down to the fact that if we grab a pack of coffee from a store shelf and know that its consumable date runs forward another six months, the coffee has been in the pack for more than 14 months. In this case, we are dealing with a rapid oxidation process that begins once the airtight package is opened.
For this reason, the freshness of the beans directly affects the quality of the brew. To appreciate the diversity of flavors and aromas of coffee, freshly roasted beans - up to 2-3 weeks from the date of roasting - are indispensable. In the first stage, immediately after the roasting process, carbon dioxide and other volatile compounds are released, which contribute to the disruption of the final flavors and aromas. Over time, these compounds gradually disappear leaving the coffee ready at its best stage.

- Slow aging (more than 6 weeks): Over time, coffee gradually becomes stale. After more than 6 weeks, the beans may lose the intensity of their aromas and acquire a flat or bland flavor. The coffee may still be drinkable, but it will not provide as unique an experience as when it was at its peak freshness.
